USE ONLY LUMP CHARCOAL in your ceramic cooker. Lump charcoal is also known as “natural” hardwood charcoal. It has no additives. It will burn hotter and leave less ash. When searing meats hotter is better. In a matter of minutes you can have the Gourmet Guru Grill up to 700 degrees, and you can hold a temperature of 550 degrees to cook steak. You can also control the temperature to cook as low as 150 degrees for several hours without having to reload your firebox.
Briquette charcoal has additives which can emit odors that will be absorbed into the ceramic. Lump charcoal will not affect your grill in that way. Although briquette charcoal dominates the market at the present lump charcoal is fast catching on.
